100% Pinot Noir.
From mid-September. The harvest is carried out entirely by hand in boxes. It is harvested only in the coolest hours of the day in order to maintain the integrity and the optimal temperature for the bunches.
The grapes all come from the same on the slopes of Mount Calvario with a south-east exposure, where it benefits from a significant temperature range that allows a late harvest so as to obtain a wine with an intense aroma and a non-raw acidity. Planting area 2m x 0.80 m. 1.2 ha of vineyard land with 7500 vines raised with the simple Guyot method and another 0.5 ha of vineyard with the cappuccina method.
The grapes are, through soft pressing, vinified in steel tanks, with the exception of 10%, which are aged in new 225 l barrels. The foam is carried out in May.

The stay on the lees starts from 50 months. A further refinement in the bottle after disgorgement lasts about 12 months for 0.75 l bottles.

Warm golden yellow color. Perlage persistent and creamy on the palate.
On the nose there are strong notes of blackcurrant, black cherry, raspberry, violet and cyclamen, cloves and nutmeg.
Structure wine throughout the meal.
It goes perfectly with first courses such as cheese and pepper, perfect with stewed rabbit and excellent with blue and sheep cheeses.
Excellent with truffles and foie gras.
