From early September, strictly by hand in boxes and only in the coolest hours of the day to maintain the integrity and optimal temperature of the bunches.

Vineyard/Soil

The grapes all come from the same vineyard, on the slopes of Mount Calvario with south-east exposure, where it benefits from a significant temperature range that allows a late harvest so as to obtain a wine with an intense aroma and a non-raw acidity. Over the years, the maturity of the vines now allows us to select small quantities of bunches that qualitatively we consider suitable for producing reserves.

Vinification

The grapes are, through soft pressing, vinified separately in steel tanks. Only 5% of Chardonnay is aged in new barrels. The cuvée is assembled in the month of January, while the foaming takes place in May

Aging

The stay on the yeasts starts at 48 months. A further refinement in bottle after disgorgement lasts about 12 months.

Tasting notes

Golden yellow color. Persistent perlage and velvety and subtle in the mouth. The nose reveals ripe scents of candied fruit, custard, dragee and at the end a balsamic sensation.

Pairing

Perfect combination with fatty fish, such as turbot, monkfish, fish with sauces and sauces. It goes well with most of the first courses, with raw meat and sausages.

The sapidity and freshness are able to clean the palate and the marked structure of Black Pine accompanies tasty dishes excellently.
